This study investigates the effect of changing a diet to include lean unprocessed beef on heart and metabolic health in adults. The purpose of this study is to see how replacing starchy vegetables and refined grains with 6 ounces of lean beef daily affects health factors related to heart and metabolism. These factors include things like blood pressure and blood sugar levels.

Participants will take part in a dietary program for 16 weeks, with specific dietary controls for 10 of those weeks. During the study, participants will have their height, weight, and blood pressure measured. They will also provide 8 blood samples, 4 stool samples, and participate in 6 dietary recall sessions. All food needed for the study will be provided at no cost for 10 weeks.

  • Who can participate: Adults who are overweight but otherwise healthy can participate. Individuals who are diabetic, pregnant, lactating, currently smoking, or lactose intolerant are not eligible.
  • Study details: Participants will follow a specific diet plan that includes lean beef and will have various health measurements taken throughout the study. A placebo is not used in this study.
  • Study Timelines and Visits: The study will last 4 months. The study requires 9 visits.
